Ingredients

  • 12 oz bow-tie pasta (farfalle)
  • 6 slices bacon
  • 1 large yellow onion, diced
  • 3 cloves garlic cloves, minced
  • 2 cups cherry tomatoes, halved
  • 0.5 tsp red pepper flakes (optional)
  • 1 tbsp olive oil
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.5 cup Parmesan cheese, grated
  • 2 tbsp fresh parsley, chopped (optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the bow-tie pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set the pasta aside.

Step 2

In a large skillet, cook the bacon over medium heat until crispy, about 6-8 minutes. Remove the bacon and place it on a paper towel-lined plate to drain. Once cool, chop the bacon into small pieces.

Step 3

Discard excess bacon grease from the skillet, leaving about 1 tablespoon. Add the olive oil to the skillet, then toss in the diced onion. Sauté the onion over medium heat until softened and translucent, about 5 minutes.

Add the minced garlic to the skillet and cook for 1 minute, stirring constantly to avoid burning.
