Ingredients

  • 12 oz Bow tie pasta (farfalle)
  • 6 slices Bacon
  • 2 cups Cherry tomatoes
  • 3 large Garlic cloves
  • 2 tbsp Olive oil
  • 1 cup Fresh basil leaves
  • 1 cup Parmesan cheese, grated
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 0.25 tsp Red pepper flakes (optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the bow tie pasta according to the package instructions until al dente. Reserve 1/2 cup of pasta water and then drain the pasta.

Step 2

While the pasta cooks, heat a large skillet over medium heat. Add the bacon slices and cook until crispy, about 6-8 minutes, flipping halfway through. Transfer the cooked bacon to a plate lined with paper towels to drain excess grease. Once cool, chop the bacon into small pieces.

Step 3

Discard most of the bacon grease from the skillet, leaving about 1 tablespoon in the pan. Add the olive oil to the skillet and heat over medium heat.

Step 4

Add the minced garlic to the skillet and sauté for 1 minute, until fragrant.

Step 5

Add the cherry tomatoes to the skillet and cook for 5-7 minutes, stirring occasionally, until the tomatoes start to break down and release their juices.

Step 6

Stir in the cooked pasta, chopped bacon, salt, black pepper, and red pepper flakes, if using. Toss everything together until well combined. Add reserved pasta water a little at a time to create a light sauce, if needed.

Remove the skillet from the heat and stir in the fresh basil leaves.
