Ingredients

  • 12 oz bow tie pasta (farfalle)
  • 2 5-oz cans canned tuna in olive oil
  • 1 14-oz jar artichoke hearts (marinated, quartered)
  • 2 tbsp olive oil
  • 2 garlic cloves (minced)
  • 0.5 tsp red chili flakes
  • 2 tbsp lemon juice
  • 2 tbsp fresh parsley (chopped)
  • 0.25 cup grated Parmesan cheese
  • 0 to taste salt
  • 0 to taste black pepper

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the bow tie pasta according to the package instructions until al dente. Drain, reserving 1/2 cup of the pasta cooking water, and set aside.

Step 2

While the pasta cooks, heat 2 tablespoons of olive oil in a large skillet over medium heat.

Step 3

Add the minced garlic and red chili flakes to the skillet and sauté for 1-2 minutes until fragrant, being careful not to burn the garlic.

Add the marinated artichoke hearts to the skillet and cook for 3-4 minutes, stirring occasionally.

Step 5
