Ingredients

  • 12 oz bow tie pasta (farfalle)
  • 1 lb Italian sausage (mild or spicy)
  • 2 tbsp olive oil
  • 1 medium yellow onion, diced
  • 3 units garlic cloves, minced
  • 14 oz crushed tomatoes
  • 1 cup heavy cream
  • 4 cups baby spinach leaves
  • 1 cup Parmesan cheese, grated
  • 0.25 tsp red pepper flakes (optional)
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.25 cup fresh basil leaves, chopped

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the bow tie pasta according to the package directions until al dente. Drain and set aside.

Step 2

In a large skillet, heat the olive oil over medium heat. Add the Italian sausage, breaking it up with a wooden spoon, and cook for 5-7 minutes or until browned and fully cooked. Remove the sausage from the skillet and set aside, leaving any drippings in the pan.

Step 3

In the same skillet, add the diced onion and cook for 3-4 minutes until softened. Stir in the minced garlic and cook for another 30 seconds until fragrant.

Step 4

Add the crushed tomatoes, heavy cream, red pepper flakes (if using), salt, and black pepper to the skillet. Stir to combine and bring to a simmer. Let the sauce cook for 5 minutes.
