Ingredients

  • 4 large Russet potatoes
  • 2 tablespoons Olive oil
  • 2 tablespoons Butter
  • 5 ounces Boursin cheese (Garlic & Fine Herbs)
  • 0.5 cup Sour cream
  • 0.25 cup Milk
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Chives, chopped
  • 0.5 cup Shredded cheddar cheese

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Scrub the potatoes clean and pat them dry. Pierce each potato a few times with a fork.

Step 3

Rub the potatoes with olive oil and place them directly on the oven rack. Bake for 50-60 minutes, or until the potatoes are fork-tender.

Once baked, remove the potatoes from the oven and allow them to cool slightly, about 5-10 minutes, until easy to handle.
