Ingredients

  • 1 pound raw shrimp (peeled and deveined)
  • 0.5 cup fresh lime juice
  • 0.25 cup fresh lemon juice
  • 0.25 cup fresh orange juice
  • 2 tablespoons white rum (optional)
  • 2 tablespoons mint leaves (finely chopped)
  • 0.5 cup red onion (thinly sliced)
  • 1 medium English cucumber (diced)
  • 2 Roma tomatoes (seeded and diced)
  • 1 jalapeño (finely minced, seeds removed for less heat)
  • 3 tablespoons fresh cilantro (chopped)
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0 tortilla chips or avocado (for serving, optional)

Directions

Step 1

Prepare the shrimp by cutting them into bite-sized pieces, roughly 1/2 inch in size. Set aside in a large, non-metallic bowl.

Step 2

In a small bowl, mix together the fresh lime juice, lemon juice, and orange juice. Add the white rum (if using) and stir well.

Step 3

Pour the citrus mixture over the shrimp, ensuring they are fully submerged. Cover the bowl with plastic wrap and refrigerate for 15-20 minutes, or until the shrimp turn opaque and firm. Stir occasionally to ensure even 'cooking' in the acid.

Step 4

Meanwhile, prepare the vegetables. Finely dice the cucumber, seed and dice the tomatoes, thinly slice the red onion, and finely mince the jalapeño. Chop the cilantro and mint leaves.

Step 5

Once the shrimp have been 'cooked' by the citrus juices, drain most of the liquid, leaving about 1/4 cup in the bowl for flavor.

Step 6

Add the prepared vegetables, cilantro, mint, salt, and black pepper to the shrimp. Gently toss everything together to combine evenly.

Step 7

Taste and adjust seasoning, adding more salt, pepper, or lime juice as needed.

Step 8

Serve immediately with tortilla chips, sliced avocado, or enjoy on its own as a light, refreshing dish.
