  • 3 cups All-purpose flour

  • 1.25 cups Water
  • 3 medium Potatoes
  • 0.5 cup Green onions (finely chopped)
  • 0.25 cup Cilantro (finely chopped)
  • 1 teaspoon Ground cumin
  • 0.5 teaspoon Turmeric
  • 0.5 teaspoon Black pepper
  • 0.5 cup Vegetable oil (for frying)

Directions

Step 1

In a large bowl, mix the all-purpose flour and 1 teaspoon of salt. Gradually add water while mixing until a soft, pliable dough forms.

Step 2

Knead the dough for 8-10 minutes until smooth. Cover and let it rest for 20 minutes.

Step 3

Peel and dice the potatoes. Boil them in salted water until tender, about 12-15 minutes. Drain and mash the potatoes in a bowl.

Add the green onions, cilantro, cumin, turmeric, black pepper, and 0.5 teaspoon of salt to the mashed potatoes. Mix well to create the filling.

Divide the dough into 10-12 equal portions. Roll each portion into a ball and then flatten into a thin circle, about 6 inches in diameter.
