Ingredients

  • 4 cups Yellow squash
  • 2 cups Carrots
  • 1 small Yellow onion
  • 6 ounces Stuffing mix (herbed or plain)
  • 10.5 ounces Cream of chicken soup
  • 1 cup Sour cream
  • 6 tablespoons Butter
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 4 cups Water

Directions

Step 1

Preheat the oven to 350°F (175°C) and grease a 9x13-inch baking dish.

Step 2

Wash and slice the yellow squash into thin rounds. Peel and dice the carrots into small pieces. Finely chop the yellow onion.

Step 3

Bring 4 cups of water to a boil in a large pot. Add the squash and carrots, and cook for 10 minutes or until tender. Drain completely and set aside.

In a large skillet, melt 4 tablespoons of butter over medium heat. Add the chopped onion and sauté for 3-4 minutes or until translucent.
