  • 0.5 cup Cilantro, chopped
  • 12 ounces Mexican lager beer
  • 4 cups Chicken or vegetable broth
  • 1 teaspoon Ground cumin
  • 1 teaspoon Paprika
  • 1.5 teaspoons Salt
  • 0.5 teaspoons Black pepper
  • 1 tablespoon Fresh lime juice

Directions

Step 1

Rinse and sort the pinto beans to remove any debris or damaged beans. Place them in a large bowl, cover with water, and soak overnight (6-8 hours). Alternatively, use the quick-soak method by boiling the beans in water for 2 minutes, then letting them sit for 1 hour.

Drain the soaked beans and set them aside.

In a large pot or Dutch oven, heat the olive oil over medium heat. Add the bacon slices and cook until crispy, about 5 minutes. Remove the bacon, crumble, and set aside.
