Ingredients

  • 1.5 lbs ground beef (80/20 blend)
  • 1.5 tbsp Worcestershire sauce
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1 tsp garlic powder
  • 1 tsp kosher salt
  • 0.5 tsp black pepper
  • 1 large red onion
  • 1 small jalapeño
  • 2 tbsp apple cider vinegar
  • 1 tbsp honey
  • 1 tbsp vegetable oil
  • 4 hamburger buns
  • 4 cheddar cheese (slices)
  • 2 tbsp butter (optional, for toasting buns)
  • 4 leaves lettuce
  • 1 large tomato
  • 4 slices pickles (optional)

Directions

Step 1

In a large mixing bowl, combine ground beef, Worcestershire sauce, smoked paprika, ground cumin, garlic powder, kosher salt, and black pepper. Mix gently with your hands until just combined, being careful not to overwork the meat.

Step 2

Divide the beef mixture into 4 equal portions and shape into patties about ¾-inch thick. Make a slight indentation in the center of each patty with your thumb to help them cook evenly and maintain their shape.

Step 3

Peel and thinly slice the red onion. Finely chop the jalapeño (remove seeds for less heat, if desired).

Step 4

Heat 1 tablespoon of vegetable oil in a skillet over medium heat. Add the sliced red onion and chopped jalapeño. Cook for 4-5 minutes until softened, stirring occasionally.

Step 5

Add apple cider vinegar and honey to the skillet with the onions and jalapeños. Cook for an additional 2-3 minutes, stirring, until the liquid reduces slightly. Remove the skillet from heat and set aside.

Step 6

Preheat a grill or stovetop griddle to medium-high heat. Lightly oil the grates or griddle surface to prevent sticking.

Step 7

Grill the burger patties for 3-4 minutes per side for medium doneness, or adjust based on your desired internal temperature. Place a slice of cheddar cheese on each patty during the last 1-2 minutes of cooking to melt.

Step 8

If desired, butter the cut sides of the hamburger buns and toast them on the grill for 1-2 minutes until golden and slightly crisp.

Step 9

To assemble, place a leaf of lettuce on the bottom half of each bun, followed by a slice of tomato, the cooked burger patty with melted cheese, and the spicy onion mixture. Add pickles if desired, and finish with the top bun.

Step 10

Serve immediately with your favorite side dishes, like fries or a fresh green salad.
