Ingredients

  • 3 cups Cauliflower florets
  • 3 cups Broccoli florets
  • 6 slices Bacon
  • 0.5 medium Red onion
  • 0.5 cup Raisins
  • 0.5 cup Sunflower seeds
  • 1 cup Cheddar cheese, shredded
  • 1 cup Mayonnaise
  • 2 tablespoons Granulated sugar
  • 2 tablespoons Apple cider vinegar
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Cook the bacon in a large skillet over medium heat until crispy, about 7-10 minutes. Remove and drain on paper towels. Once cooled, crumble the bacon into small pieces.

Step 2

Wash and thoroughly dry the cauliflower and broccoli florets. Cut them into small, bite-sized pieces and transfer them to a large mixing bowl.

Step 3

Finely dice the red onion and add it to the bowl with the cauliflower and broccoli.

Step 4

Add the raisins, sunflower seeds, shredded cheddar cheese, and crumbled bacon to the bowl.

Step 5

In a separate smaller bowl, whisk together the mayonnaise, granulated sugar, apple cider vinegar, salt, and black pepper until smooth and well combined.

Step 6

Pour the dressing over the vegetable mixture and toss until everything is evenly coated.

Step 7

Cover the salad and refrigerate for at least 1 hour to allow the flavors to meld together.

Step 8

Before serving, give the salad a quick toss and adjust seasoning if necessary. Serve chilled.
