Ingredients

  • 250 ml Fresh orange juice
  • 2 teaspoons Orange zest
  • 100 grams Granulated sugar
  • 3 pieces Egg yolks
  • 300 ml Double cream (heavy cream)
  • 1 teaspoon Vanilla extract
  • 1 bunch Fresh mint leaves (for garnish, optional)

Directions

Step 1

1. In a medium-sized saucepan, combine the fresh orange juice, orange zest, and granulated sugar. Heat gently over medium-low heat, stirring occasionally, until the sugar dissolves, about 3–5 minutes.

Step 2

2. Meanwhile, in a heatproof bowl, whisk the egg yolks until smooth and slightly pale.

Step 3

3. Gradually pour the warm orange juice mixture into the egg yolks while whisking continuously to temper the eggs and avoid curdling.

Step 4

4. Return the mixture to the saucepan and cook over low heat, stirring constantly with a wooden spoon or spatula, until it thickens enough to coat the back of the spoon (about 5–7 minutes). Be careful not to let the mixture boil.

Step 5

5. Remove the saucepan from the heat and strain the orange custard through a fine-mesh sieve into a clean bowl to remove any lumps or zest. Let it cool to room temperature, then refrigerate for 30 minutes to chill completely.

Step 6

6. In a separate mixing bowl, whip the double cream with the vanilla extract until it forms soft peaks.

Step 7

7. Gently fold the whipped cream into the chilled orange custard, incorporating it fully without deflating the cream.

Step 8

8. Divide the mixture evenly among serving glasses or bowls. Garnish with fresh mint leaves, if desired, and serve immediately, or chill in the refrigerator until ready to serve.
