Ingredients

  • 2 pounds ground beef
  • 1 large, diced onion
  • 2 medium (diced, any color) bell peppers
  • 4 minced garlic cloves
  • 28 ounces (1 can) crushed tomatoes
  • 6 ounces (1 small can) tomato paste
  • 15 ounces (1 can, drained and rinsed) kidney beans
  • 15 ounces (1 can, drained and rinsed) black beans
  • 1 cup beef broth
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 2 teaspoons paprika
  • 1 teaspoon (dried) oregano
  • 0.5 teaspoon (optional, for heat) cayenne pepper
  • 1 teaspoon (adjust to taste) salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons olive oil
  • 0 for garnish (optional) sour cream
  • 0 for garnish (optional) shredded cheese
  • 0 for garnish (optional) chopped cilantro

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium-high heat.

Step 2

Add the ground beef and cook until browned, breaking it apart with a wooden spoon, about 7-8 minutes. Drain any excess fat and set the beef aside.

Step 3

In the same pot, add the diced onion and bell peppers. Sauté until softened, about 5-6 minutes.

Step 4

Stir in the minced garlic and cook for an additional 1 minute, until fragrant.

Step 5

Add the cooked ground beef back to the pot along with the chili powder, cumin, paprika, oregano, cayenne pepper (if using), salt, and black pepper. Stir well to combine and toast the spices for 1-2 minutes.

Step 6

Stir in the crushed tomatoes, tomato paste, beef broth, kidney beans, and black beans. Mix until everything is evenly combined.

Step 7

Bring the chili to a boil, then reduce the heat to low and let it simmer uncovered for 45 minutes, stirring occasionally to prevent sticking.

Step 8

Taste and adjust the seasoning with more salt or spices as needed.

Step 9

Serve the chili hot in bowls. Top with sour cream, shredded cheese, and chopped cilantro as desired.
