Ingredients

  • 2 large Sweet potatoes
  • 0.5 cup Unsweetened applesauce
  • 2 large Eggs
  • 0.75 cup Low-fat milk
  • 1 teaspoon Vanilla extract
  • 2 teaspoons Ground cinnamon
  • 0.5 teaspoon Ground nutmeg
  • 0.25 teaspoon Salt
  • 2 tablespoons Stevia or monk fruit sweetener (optional, based on taste)
  • 1 9-inch Pre-made whole-wheat pie crust

Directions

Step 1

Preheat the oven to 350°F (175°C).

Step 2

Wash, peel, and chop the sweet potatoes into chunks. Boil them in a pot of water until fork-tender, about 15 minutes. Drain and set aside to cool slightly.

Step 3

Mash the cooked sweet potatoes in a large bowl until smooth. You should have about 2 cups of mashed sweet potato.

Step 4

Add the unsweetened applesauce, eggs, low-fat milk, vanilla extract, cinnamon, nutmeg, and salt to the mashed sweet potatoes. Stir well to combine.

Step 5

Taste the mixture and, if desired, add 2 tablespoons of stevia or monk fruit sweetener for additional sweetness. Mix thoroughly.

Step 6

Pour the sweet potato filling into the pre-made whole-wheat pie crust, spreading it evenly.

Step 7

Place the pie on the middle rack of the oven and bake for 45-50 minutes, or until the filling is set and a knife inserted into the center comes out clean.

Step 8

Remove the pie from the oven and let it cool completely at room temperature before slicing.

Step 9

Serve as is or with a dollop of low-fat whipped cream or plain Greek yogurt, if desired.
