  • 1 teaspoon kosher salt
  • 0.5 teaspoons black pepper

Directions

Step 1

Preheat your barbecue to 300°F, setting it for indirect heat. If using a gas grill, turn on only one or two burners and leave one side off. If using a charcoal grill, bank the coals to one side.

Remove any excess fat from the surface of the ham, leaving a thin layer for flavor. Score the fat in a diamond pattern without cutting into the meat.

Place the ham on a large sheet of aluminum foil and wrap it loosely, ensuring the foil isn't in direct contact with the meat. Set the foil-wrapped ham on the cool side of the barbecue.

Move the ham to the hot side of the barbecue to allow the glaze to caramelize slightly. Cook for an additional 15–30 minutes, brushing with more glaze every 10 minutes, until the internal temperature reaches 140°F and the surface is golden brown.

Remove the ham from the barbecue and tent it loosely with foil. Let the ham rest for 15 minutes before slicing and serving.
