Ingredients

  • 300 grams Dark chocolate (70% cocoa)
  • 120 ml Heavy cream
  • 30 grams Unsalted butter
  • 20 grams Granulated sugar
  • 1 pinch Sea salt
  • 1 teaspoon Vanilla extract
  • 2 tablespoons Cocoa powder (optional, for dusting)

Directions

Step 1

1. Chop 200 grams of the dark chocolate into small pieces and place it in a heatproof bowl.

Step 2

2. In a small saucepan, heat the heavy cream over medium heat until it begins to simmer. Do not let it boil.

Step 3

3. Pour the hot cream over the chopped chocolate. Let it sit for 1-2 minutes, then gently stir until smooth and fully combined.

Step 4

4. Stir in the unsalted butter, granulated sugar, sea salt, and vanilla extract until the mixture is glossy and smooth.

Step 5

5. Cover the bowl with plastic wrap and refrigerate for about 1-2 hours or until the ganache is firm enough to scoop.

Step 6

6. Once the ganache is set, use a teaspoon or small scoop to form it into bite-sized balls. Roll each ball gently between your palms to smooth them. Set aside on a parchment-lined baking sheet.

Step 7

7. Melt the remaining 100 grams of dark chocolate in a heatproof bowl over a saucepan of simmering water (double boiler method). Stir until fully melted and glossy.

Step 8

8. Using a fork or dipping tool, coat each ganache ball in the melted chocolate, letting the excess drip off, and place it back on the parchment-lined sheet.

Step 9

9. If desired, dust the bonbons with cocoa powder while the chocolate coating is still wet.

Step 10

10. Let the coated bonbons set at room temperature or chill in the refrigerator until the chocolate is firm.

Step 11

11. Serve and enjoy your elegant homemade Bonbon S!
