Ingredients

  • 2 sheets frozen puff pastry sheets
  • 4 cups fresh spinach
  • 8 ounces cream cheese
  • 1 clove garlic clove
  • 1 cup shredded mozzarella cheese
  • 0.5 cup grated Parmesan cheese
  • 1 large egg
  • 1 tablespoon butter
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Thaw the puff pastry sheets according to the package instructions, typically about 30-40 minutes at room temperature.

Step 2

Preheat your oven to 375°F (190°C). Line two baking sheets with parchment paper.

Step 3

In a large skillet, melt the butter over medium heat. Add the garlic and sauté for 1 minute or until fragrant.

Step 4

Add the fresh spinach to the skillet and sauté for 2-3 minutes until wilted. Remove from heat and let cool slightly. Squeeze out any excess moisture using a clean kitchen towel or paper towels.

Step 5

In a medium bowl, combine the cream cheese, shredded mozzarella, grated Parmesan, salt, and black pepper. Mix until smooth and evenly combined.

Step 6

Add the cooled spinach to the cream cheese mixture, folding it in until fully incorporated.

Step 7

Gently roll out one puff pastry sheet on a lightly floured surface to smooth out any creases. Spread half of the spinach mixture evenly over the puff pastry, leaving a 1-inch border around the edges.

Step 8

Starting from one of the longer edges, tightly roll the puff pastry into a log. Use a sharp knife to slice the log into 12 equal pieces (about 1-inch thick each). Place the pinwheels cut-side up on the prepared baking sheet.

Step 9

Repeat the process with the second puff pastry sheet and the remaining spinach mixture.

Step 10

In a small bowl, beat the egg with a tablespoon of water to create an egg wash. Brush the tops of each pinwheel with the egg wash for a golden finish.

Step 11

Bake the pinwheels in the preheated oven for 16-18 minutes or until puffed and golden brown.

Step 12

Remove the pinwheels from the oven and let them cool for a few minutes before serving. Enjoy warm or at room temperature!
