Ingredients

  • 300 grams All-purpose flour
  • 250 grams Granulated sugar
  • 200 grams Unsalted butter
  • 4 large Eggs
  • 250 ml Beer (lager or pale ale)
  • 10 grams Baking powder
  • 5 ml Vanilla extract
  • 1 pinch Salt
  • 20 grams Powdered sugar (optional, for garnish)

Directions

Step 1

Preheat the oven to 180°C (350°F) and grease a bundt or loaf pan with butter, then lightly dust it with flour.

Step 2

In a large mixing bowl, cream the butter and sugar together using an electric mixer until pale and fluffy, about 3-4 minutes.

Step 3

Add the eggs, one at a time, beating well after each addition to ensure a smooth mixture.

Step 4

Pour in the beer and vanilla extract, and mix until combined. The batter may look slightly curdled but this is normal.

Step 5

In a separate bowl, whisk together the flour, baking powder, and salt.

Step 6

Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Be careful not to overmix.

Step 7

Pour the batter into the prepared pan and smooth the top with a spatula.

Step 8

Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted in the center comes out clean.

Step 9

Remove the cake from the oven and allow it to cool in the pan for 10-15 minutes before turning it out onto a wire rack to cool completely.

Step 10

Once the cake has cooled, optionally sift powdered sugar over the top for garnish before serving.
