Ingredients

  • 3 medium Carrots
  • 3 large Eggs
  • 1 cup Granulated sugar
  • 1 cup Vegetable oil
  • 2 cups All-purpose flour
  • 1 tablespoon Baking powder
  • 0.25 teaspoon Salt
  • 2 tablespoons Unsalted butter
  • 2 tablespoons Cocoa powder
  • 0.5 cup Condensed milk
  • 2 tablespoons Milk

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease and flour a 9x13-inch baking pan.

Step 2

Peel and chop the carrots into smaller pieces. Add the carrots, eggs, sugar, and vegetable oil to a blender. Blend until the mixture is smooth and well-combined.

Step 3

In a large mixing bowl, sift together the all-purpose flour, baking powder, and salt. Gradually pour the carrot mixture from the blender into the dry ingredients, whisking until the batter is smooth and lump-free.

Step 4

Pour the batter into the prepared baking pan, spreading it evenly. Tap the pan lightly on the counter to remove any air bubbles.

Step 5

Bake the cake in the preheated oven for 35-40 minutes or until a toothpick inserted into the center comes out clean.

Step 6

While the cake is baking, prepare the chocolate glaze. In a small saucepan over medium heat, melt the butter and stir in the cocoa powder. Add the condensed milk and milk, stirring constantly until the mixture is smooth and slightly thickened. Remove from heat and let cool slightly.

Step 7

Once the cake has finished baking, allow it to cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely.

Step 8

Spread the chocolate glaze evenly over the cooled cake. Slice and serve for a delicious dessert or snack.
