Ingredients

  • 2 cups raisins
  • 2 cups water
  • 0.5 cups unsalted butter
  • 1 cups granulated sugar
  • 0.5 cups brown sugar
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1 teaspoons baking soda
  • 1 teaspoons ground cinnamon
  • 0.5 teaspoons ground nutmeg
  • 0.25 teaspoons ground cloves
  • 0.5 teaspoons salt
  • 1 teaspoons vanilla extract
  • 0.5 cups chopped nuts (optional)

Directions

Step 1

In a medium saucepan, combine the raisins and water. Bring to a boil over medium heat. Simmer for 5 minutes, then remove from heat and let cool slightly. Do not drain the water; it will be used in the batter.

Step 2

Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan or a similarly sized cake pan.

Step 3

In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.

Step 4

Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

Step 5

In another bowl, whisk together the flour, baking soda, cinnamon, nutmeg, cloves, and salt.

Step 6

Gradually add the dry ingredients to the wet ingredients, alternating with the slightly warm raisin mixture (including the liquid). Stir until just combined—do not overmix.

Step 7

If desired, fold in the chopped nuts for added texture and flavor.

Step 8

Pour the batter into the prepared pan and smooth the surface with a spatula.

Step 9

Bake in the preheated oven for 55–60 minutes, or until a toothpick inserted into the center comes out clean.

Step 10

Allow the cake to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely before slicing and serving.
