Ingredients

  • 1.5 kg Beef brisket or topside (Tafelspitz cut, if possible)
  • 3 liters Water
  • 2 Carrots (peeled and chopped)
  • 1 Leek (cleaned and chopped)
  • 1 Celery root (peeled and chopped)
  • 1 Onion (halved and charred on the cut side)
  • 2 Bay leaves
  • 10 pieces Whole black peppercorns
  • 2 tbsp Salt
  • 50 g Fresh horseradish (grated)
  • 150 ml Heavy cream
  • 30 g Butter
  • 2 tbsp All-purpose flour
  • 1 tsp White vinegar
  • 2 tbsp Fresh parsley (chopped, for garnish)

Directions

Step 1

1. Fill a large pot with 3 liters of water and add the salt. Heat over medium-high and bring to a boil.

2. Add the beef brisket to the pot and reduce the heat to a simmer. Skim off any foam that rises to the surface.

3. Once the broth is clear, add the carrots, leek, celery root, charred onion halves, bay leaves, and black peppercorns.

4. Cover the pot with a lid, leaving a small gap, and let simmer gently for about 2.5–3 hours. Check the beef for doneness by piercing it with a fork; it should be tender but not falling apart.
