Peel and chop the potatoes into evenly sized chunks. Rinse them under cold water to remove excess starch.
In a large pot, add the potatoes and enough water to cover them. Add 1 teaspoon of salt and bring the water to a boil.
While the potatoes cook, rinse the curly kale thoroughly and remove any tough stems. Chop the leaves into smaller pieces.
After the potatoes have boiled for 10 minutes, add the chopped curly kale on top of the potatoes in the same pot. Cover with a lid and let them steam together for another 10-15 minutes, or until the potatoes are tender.
While the potatoes and kale are cooking, prepare the smoked sausages according to the package instructions. Most smoked sausages are pre-cooked and only need to be heated either in gently simmering water or a skillet.
Once the potatoes and kale are cooked, drain the water and return them to the pot.
Add the butter, milk, mustard, and the remaining 1 teaspoon of salt to the potato and kale mixture. Mash them together until you achieve a slightly chunky consistency. Adjust the seasonings with additional salt and pepper to taste.
Slice the smoked sausages into thick pieces for serving.
