Ingredients

  • 2 tablespoons unsalted butter
  • 2 leeks (white and light green parts only, thinly sliced)
  • 3 garlic cloves (minced)
  • 3 yellow potatoes (peeled and diced)
  • 4 cups vegetable or chicken stock
  • 1 cup whole milk
  • 1 cup heavy cream
  • 2 cups Boerenkaas (Dutch farmer's cheese, shredded)
  • 2 tablespoons fresh parsley (chopped, for garnish)
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper

Directions

Step 1

In a large pot, melt the unsalted butter over medium heat.

Step 2

Add the sliced leeks and sauté for 5 minutes until softened, stirring occasionally.

Step 3

Stir in the minced garlic and cook for an additional minute until fragrant.

Step 4

Add the diced potatoes and pour in the vegetable or chicken stock. Bring the mixture to a boil, then reduce the heat to a simmer. Cover and cook for 15 minutes or until the potatoes are tender.

Step 5

Using an immersion blender or regular blender, puree the soup until smooth.

Step 6

Return the soup to the pot if using a blender. Stir in the whole milk, heavy cream, shredded Boerenkaas, salt, and ground black pepper. Cook on low heat, stirring frequently, until the cheese has melted and the soup is warmed through (approximately 5 minutes). Do not let the soup boil after adding the cheese.

Step 7

Taste the soup and adjust the seasoning with more salt and pepper if needed.

Step 8

Serve the soup hot, garnished with chopped fresh parsley. Pair it with crusty bread for a complete and satisfying meal.
