Ingredients

  • 1 pound Shrimp (large, peeled and deveined)
  • 1 teaspoon Kosher salt
  • 0.5 teaspoon Ground black pepper
  • 0.25 teaspoon Cayenne pepper
  • 2 tablespoons Olive oil
  • 2 tablespoons Unsalted butter
  • 2 cloves Garlic (minced)
  • 4 ounces Smoked andouille sausage (sliced thinly)
  • 1 cup Chicken stock
  • 0.5 cup Heavy cream
  • 1 cup Grits (stone-ground)
  • 2 cups Whole milk
  • 1 cup Cheddar cheese (shredded)
  • 2 tablespoons Green onions (sliced thinly)
  • 2 tablespoons Fresh parsley (chopped)
  • 1 tablespoon Fresh lemon juice
  • 0.5 teaspoon Paprika (for garnish, optional)

Directions

Step 1

Season the shrimp with kosher salt, ground black pepper, and cayenne pepper. Set aside.

Step 2

In a large skillet, heat the olive oil over medium heat. Add the shrimp in a single layer and cook for 2-3 minutes per side until just cooked through. Remove the shrimp and set aside.

Step 3

Reduce the heat to medium-low, and add the unsalted butter to the same skillet. Once melted, stir in the minced garlic and cook for 1 minute until fragrant.

Step 4

Add the sliced andouille sausage to the skillet and cook for 3-4 minutes until browned.

Step 5

Pour in the chicken stock and heavy cream. Increase the heat to medium and bring the mixture to a simmer. Cook for 5-7 minutes until slightly thickened. Taste and adjust seasoning with additional salt if needed.

Step 6

Meanwhile, in a medium saucepan, bring the whole milk and 2 cups of water to a boil. Season with a pinch of salt.

Step 7

Slowly whisk in the grits, reduce the heat to low, and cook for 20-25 minutes, stirring occasionally, until the grits are tender and thickened.

Step 8

Remove the grits from heat and stir in the shredded cheddar cheese until melted. Adjust seasoning as needed.

Step 9

To serve, spoon a generous portion of the cheesy grits into a bowl or plate. Top with the cooked shrimp and sausage-cream sauce.

Step 10

Garnish with sliced green onions, chopped parsley, a squeeze of fresh lemon juice, and a dusting of paprika if desired. Serve immediately and enjoy!
