Ingredients

  • 1.5 pounds Ground beef (80% lean, 20% fat)
  • 1 teaspoon Kosher salt
  • 0.5 teaspoon Freshly ground black pepper
  • 8 slices Sharp cheddar cheese slices
  • 4 Burger buns
  • 2 tablespoons Unsalted butter
  • 1 tablespoon Vegetable oil
  • 4 Lettuce leaves
  • 4 Tomato slices
  • 4 Red onion slices
  • 4 tablespoons Ketchup
  • 4 tablespoons Mayonnaise

Directions

Step 1

Preheat a grill or grill pan to medium-high heat.

Step 2

Divide the ground beef into four equal portions, about 6 ounces each. Shape each portion into a round patty, about 3/4 inch thick. Make a shallow indentation in the center of each patty using your thumb to prevent the burgers from puffing up while cooking.

Step 3

Season both sides of each burger generously with kosher salt and freshly ground black pepper.

Step 4

Brush the grill grates with vegetable oil to prevent sticking.

Step 5

Place the burger patties on the grill and cook for 3-4 minutes on the first side. Flip the burgers and cook for an additional 3 minutes for medium-rare, or longer depending on your desired doneness.

Step 6

About 1 minute before the burgers are done, place 2 slices of sharp cheddar cheese on each patty. Close the grill lid or tent the burgers with foil to melt the cheese completely.

Step 7

While the burgers cook, split the burger buns in half and spread a light layer of butter on the cut sides. Toast the buns on the grill until golden brown, about 1-2 minutes.

Step 8

To assemble the burgers, spread 1 tablespoon each of ketchup and mayonnaise on the bottom half of each bun.

Step 9

Layer a lettuce leaf, a tomato slice, and a red onion slice on top of the condiments.

Step 10

Place the cooked burger patty with melted cheddar on top of the vegetables.

Step 11

Cover with the top half of the bun and serve immediately.
