Ingredients

  • 0.75 cups All-purpose flour
  • 0.75 cups Whole milk
  • 3 Large eggs
  • 1 tablespoons Granulated sugar
  • 1 teaspoons Vanilla extract
  • 0.25 teaspoons Salt
  • 2 tablespoons Unsalted butter
  • 2 tablespoons Powdered sugar
  • 1 tablespoons Fresh lemon juice (optional)
  • 1 cups Fresh fruit (optional, for serving)

Directions

Step 1

Preheat your oven to 425°F (220°C). Place a 10-to-12-inch oven-safe skillet (cast iron works best) inside the oven to heat up while you prepare the batter.

Step 2

In a blender, combine the all-purpose flour, whole milk, eggs, granulated sugar, vanilla extract, and salt. Blend until smooth, about 30 seconds. Alternatively, whisk everything together in a large bowl until well combined and free of lumps.

Step 3

Carefully remove the hot skillet from the oven using oven mitts. Add the unsalted butter to the skillet and swirl it around until melted, making sure to coat the bottom and sides of the pan.

Step 4

Pour the batter into the hot skillet and immediately return it to the oven. Bake for 18-20 minutes, or until the pancake is puffed up and golden brown around the edges.

Step 5

Remove the skillet from the oven. The pancake will deflate slightly as it cools, which is normal.

Step 6

Dust the pancake with powdered sugar, drizzle with fresh lemon juice (if desired), and top with fresh fruit for serving. Slice into wedges and serve warm.
