Ingredients

  • 4 pieces Boneless, skinless chicken breasts
  • 2 tablespoons Olive oil
  • 2 tablespoons Lime juice
  • 1 tablespoon Chili powder
  • 1 teaspoon Ground cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Garlic powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 pieces Red bell peppers
  • 2 pieces Green bell peppers
  • 1 piece Yellow bell pepper
  • 1 piece Large red onion
  • 8 pieces Tortillas
  • 0.5 cup Sour cream
  • 0.5 cup Salsa
  • 0.25 cup Fresh cilantro (optional)

Directions

Step 1

Place chicken breasts between two sheets of plastic wrap or wax paper. Using a mallet, gently pound the chicken to an even thickness (about 1/2 inch).

Step 2

In a bowl, whisk together olive oil, lime juice, chili powder, cumin, paprika, garlic powder, salt, and black pepper to create the marinade.

Step 3

Place the chicken breasts in a resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring each piece is evenly coated. Marinate for at least 30 minutes at room temperature or up to 2 hours in the refrigerator.

Step 4

While the chicken marinates, prepare the vegetables. Slice red, green, and yellow bell peppers into thin strips. Slice the red onion into half-moon shapes.

Step 5

Heat a large skillet or grill pan over medium-high heat. Once hot, add a drizzle of olive oil.

Step 6

Remove the chicken from the marinade, allowing excess to drip off. Cook the chicken in the skillet for 4-5 minutes on each side or until fully cooked (internal temperature of 165°F). Transfer to a plate and let rest for 5 minutes before slicing into thin strips.

Step 7

In the same skillet, add a bit more olive oil if necessary. Toss in the sliced bell peppers and onions. Sauté for 5-7 minutes until softened and slightly charred.

Step 8

Warm the tortillas either in a dry skillet, over an open flame, or in the microwave, wrapping them in a damp paper towel to keep them moist.

Step 9

Assemble the fajitas by layering the chicken strips, sautéed onions and bell peppers onto the tortillas. Serve with sour cream, salsa, and fresh cilantro if desired.

Step 10

Enjoy your delicious, homemade Bobby Flay-style chicken fajitas!
