Ingredients

  • 2 pounds ground beef
  • 1 tablespoon olive oil
  • 1 large yellow onion, diced
  • 1 medium green bell pepper, diced
  • 2 cloves garlic, minced
  • 28 ounces diced tomatoes, with juices
  • 15 ounces tomato sauce
  • 2 cups beef broth
  • 2 tablespoons soy sauce
  • 2 teaspoons Italian seasoning
  • 1 teaspoon paprika
  • 2 pieces dried bay leaves
  • 2 cups elbow macaroni, uncooked
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup shredded cheddar cheese (optional, for serving)
  • 2 tablespoons fresh parsley, chopped (optional for garnish)

Directions

Step 1

Heat a large pot over medium-high heat and add the olive oil. Once hot, add the ground beef and cook until browned, breaking it apart with a wooden spoon. Drain excess fat, if needed.

Step 2

Add the diced onion and green bell pepper to the pot. Sauté for 5 minutes, stirring occasionally, until the vegetables are softened.

Step 3

Stir in the minced garlic and cook for 1 more minute until fragrant.

Step 4

Add the diced tomatoes, tomato sauce, beef broth, soy sauce, Italian seasoning, paprika, bay leaves, salt, and black pepper to the pot. Stir well to combine.

Step 5

Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for 20 minutes, stirring occasionally.

Step 6

Stir in the elbow macaroni, re-cover the pot, and continue to simmer for 12-15 minutes, or until the pasta is tender. Stir occasionally to prevent the macaroni from sticking to the bottom of the pot.

Step 7

Once the pasta is cooked, remove the bay leaves. Taste and adjust seasoning with additional salt or pepper, if needed.

Step 8

Serve hot, optionally topped with shredded cheddar cheese and a sprinkle of fresh parsley. Enjoy!
