Slice the tomatoes in half and brush them with 1 tablespoon of olive oil.
Place the tomatoes cut-side down on the grill. Cook for 4-6 minutes, or until they are slightly charred and softened. Flip and cook the other side for 3-4 minutes.
Remove the grilled tomatoes from the grill and let them cool slightly. Once cool enough to handle, peel off the skins and roughly chop the flesh. Set aside.
