Ingredients

  • 6 medium ripe tomatoes
  • 2 tablespoons olive oil
  • 1 medium yellow onion, finely diced
  • 3 cloves garlic, minced
  • 0.25 cups brown sugar
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon smoked paprika
  • 0.5 teaspoons red pepper flakes (optional)
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper

Directions

Step 1

Preheat your grill to medium-high heat.

Step 2

Slice the tomatoes in half and brush them with 1 tablespoon of olive oil.

Step 3

Place the tomatoes cut-side down on the grill. Cook for 4-6 minutes, or until they are slightly charred and softened. Flip and cook the other side for 3-4 minutes.

Step 4

Remove the grilled tomatoes from the grill and let them cool slightly. Once cool enough to handle, peel off the skins and roughly chop the flesh. Set aside.

Step 5

In a medium saucepan, heat the remaining 1 tablespoon of olive oil over medium heat.

Step 6

Add the diced onion and cook for 5-6 minutes, stirring occasionally, until softened and translucent.

Step 7

Add the minced garlic to the pan and cook for an additional 1 minute until fragrant.

Step 8

Stir in the brown sugar, apple cider vinegar, balsamic vinegar, smoked paprika, red pepper flakes (if using), salt, and black pepper.

Step 9

Add the chopped grilled tomatoes and their juices to the saucepan. Stir to combine.

Step 10

Reduce the heat to low and let the mixture simmer for 25-30 minutes, stirring occasionally, until the jam is thickened and slightly glossy.

Step 11

Taste and adjust seasoning as needed.

Step 12

Remove the jam from the heat and let it cool to room temperature. It will thicken further as it cools.

Step 13

Transfer the jam to a clean jar or airtight container and refrigerate. The jam will keep for up to 2 weeks.
