Ingredients

  • 2 cups Carrots
  • 1 cup Orange juice
  • 1 cup Pineapple juice
  • 2 packets Unflavored gelatin
  • 0.5 cup Water
  • 0.5 cup Granulated sugar
  • 2 tablespoons Lemon juice
  • 0.25 teaspoons Salt
  • 0.5 cup Mayonnaise

Directions

Step 1

Peel and grate the carrots to yield 2 cups. Set them aside.

Step 2

In a small saucepan, combine the unflavored gelatin with 0.5 cups of water. Let it bloom for 5 minutes.

Step 3

Heat the gelatin mixture over low heat, stirring constantly, until the gelatin fully dissolves (about 2-3 minutes). Remove from heat.

Step 4

In a large mixing bowl, combine the orange juice, pineapple juice, sugar, lemon juice, and salt. Mix well until the sugar dissolves.

Step 5

Slowly pour the dissolved gelatin mixture into the liquid mixture, whisking continuously to incorporate.

Step 6

Add the grated carrots to the mixture and stir until evenly distributed.

Step 7

Gently fold in the mayonnaise, ensuring it is well incorporated without lumps.

Step 8

Lightly grease a gelatin mold or bundt pan with non-stick spray or a small amount of neutral oil.

Step 9

Pour the carrot mixture into the prepared mold, smoothing the surface with a spatula.

Step 10

Cover with plastic wrap and refrigerate for at least 4-6 hours, or overnight, until fully set.

Step 11

To unmold, dip the mold briefly in warm water (10-15 seconds) to loosen the edges. Invert onto a serving plate and gently lift the mold.

Step 12

Serve chilled and enjoy as a side dish or retro-style dessert.
