Ingredients

  • 2 cups Bob's Red Mill Whole Wheat Flour
  • 1 cup All-purpose flour
  • 1 tablespoon Baking powder
  • 0.5 teaspoon Baking soda
  • 0.5 teaspoon Salt
  • 6 tablespoons Unsalted butter, cold and cubed
  • 1 cup Buttermilk, cold
  • 1 tablespoon Honey (optional, for a touch of sweetness)

Directions

Step 1

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine the whole wheat flour, all-purpose flour, baking powder, baking soda, and salt. Whisk together until well blended.

Step 3

Add the cold, cubed butter to the dry ingredients. Use a pastry cutter or your fingers to work the butter into the flour mixture until it resembles coarse crumbs.

Step 4

Make a well in the center of the mixture and pour in the buttermilk. If using honey, add it with the buttermilk. Gently stir until the dough just comes together. Avoid overmixing.

Step 5

Turn the dough out onto a lightly floured surface. Gently knead the dough 4–5 times to bring it together, then pat it into a rectangle about 1 inch thick.

Step 6

Using a 2.5-inch biscuit cutter, cut out the biscuits. Gather the scraps of dough, reshape, and cut out additional biscuits as needed.

Step 7

Place the biscuits on the prepared baking sheet, spacing them about 1 inch apart.

Step 8

Bake in the preheated oven for 10–12 minutes, or until the tops are golden brown.

Step 9

Remove from the oven and let the biscuits cool slightly on the baking sheet before serving. Serve warm with butter, honey, or your favorite jam.
