Ingredients

  • 6 whole ripe peaches
  • 1 cup granulated sugar
  • 0.5 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 0.25 teaspoon ground nutmeg
  • 0.5 cup unsalted butter
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 0.25 teaspoon salt
  • 1 cup whole milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon juice

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Peel, pit, and slice the peaches into thin wedges. Place the peach slices in a mixing bowl.

Step 3

Add 1/2 cup of granulated sugar, brown sugar, cinnamon, nutmeg, and lemon juice to the peaches. Mix until the peaches are evenly coated, then set aside.

Step 4

Place the butter in a 9x13-inch (or similarly sized) baking dish, and put the dish in the oven until the butter is fully melted. Once melted, remove the dish from the oven carefully.

Step 5

In a separate mixing bowl, whisk together the flour, remaining 1/2 cup of granulated sugar, baking powder, and salt.

Step 6

Stir in the milk and vanilla extract to create a smooth batter.

Step 7

Pour the batter evenly over the melted butter in the baking dish. Do not stir.

Step 8

Carefully spoon the peach mixture over the batter, spreading it evenly. Do not mix; the batter will rise around the fruit as it bakes.

Step 9

Bake in the preheated oven for 40-45 minutes, or until the top is golden brown and a toothpick inserted into the crust comes out clean.

Step 10

Allow the cobbler to cool for at least 10 minutes before serving. Serve warm with a scoop of vanilla ice cream or whipped cream if desired.
