Ingredients

  • 1 cup long-grain white rice
  • 2 tablespoons vegetable oil
  • 0.5 medium yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 0.5 cup tomato sauce
  • 1 teaspoon cumin
  • 0.5 teaspoon chili powder
  • 1 teaspoon salt
  • 0.5 cup frozen peas and carrots mix
  • 2 tablespoons fresh cilantro, chopped (optional)

Directions

Step 1

Rinse the rice under cold water in a fine-mesh strainer until the water runs clear. This removes excess starch and prevents sticking.

Step 2

Heat the vegetable oil in a medium saucepan over medium heat.

Step 3

Add the rice to the saucepan and cook, stirring frequently, for 5-7 minutes until the rice turns a light golden-brown color.

Step 4

Add the chopped onion and continue cooking for another 2 minutes until the onion becomes translucent.

Step 5

Stir in the garlic and cook for another 30 seconds until fragrant.

Step 6

Pour in the chicken broth and add the tomato sauce, cumin, chili powder, and salt. Stir everything together until well combined.

Step 7

Bring the mixture to a boil over medium-high heat.

Step 8

Reduce the heat to low, cover the saucepan with a tight-fitting lid, and simmer for 15 minutes.

Step 9

After 15 minutes, add the peas and carrots on top of the rice. Do not stir. Cover again and continue simmering for another 5 minutes.

Step 10

Once the cooking time is complete, remove the saucepan from the heat and let it sit, covered, for an additional 5 minutes to allow the rice to finish steaming.

Step 11

Fluff the rice gently with a fork to mix in the peas and carrots. If desired, sprinkle with chopped cilantro before serving.

Step 12

Serve warm as a side dish to your favorite Mexican entrees. Enjoy!
