Ingredients

  • 4 slices Thick-cut bacon
  • 2 large Eggs
  • 2 large Lettuce leaves
  • 1 medium Tomato
  • 2 tablespoons Mayonnaise
  • 4 slices Country-style bread
  • 1 tablespoon Butter
  • 0.25 teaspoons Salt
  • 0.25 teaspoons Black pepper

Directions

Step 1

Preheat a skillet or frying pan over medium heat.

Step 2

Cook the bacon in the skillet until crispy, about 4-5 minutes on each side. Remove and place onto a paper towel-lined plate to drain excess grease.

While the bacon is cooking, slice the tomato into 1/4-inch thick rounds and wash and dry the lettuce leaves. Set aside.

In a small frying pan, melt the butter over medium heat. Crack one egg into the pan and cook until the whites are set but the yolk is still runny, about 2-3 minutes. For a firmer yolk, flip the egg and cook for an additional 1-2 minutes. Repeat with the second egg. Sprinkle each egg with a pinch of salt and pepper. Set aside.

Toast the bread slices until golden brown. Spread 1 tablespoon of mayonnaise on one side of each slice of bread.

Step 6

To assemble the sandwiches, layer 2 slices of bacon, a lettuce leaf, a few tomato slices, and one fried egg on top of one slice of bread (mayonnaise side up). Top with another slice of bread, mayonnaise side down.

Cut each sandwich in half if desired and serve immediately.
