Ingredients

  • 2 lbs ground beef (80/20 blend)
  • 0.5 lbs ground pork
  • 1 medium yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup breadcrumbs
  • 0.5 cup whole milk
  • 2 large eggs
  • 2 tbsp Worcestershire sauce
  • 0.25 cup ketchup
  • 2 tbsp parsley, finely chopped
  • 1.5 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp paprika
  • 0.5 tsp dry mustard powder
  • 2 tbsp brown sugar
  • 0.25 cup ketchup (for glaze)
  • 1 tsp apple cider vinegar

Directions

Step 1

Preheat your oven to 350°F (175°C). Lightly grease a 9x5-inch loaf pan or line it with parchment paper for easier cleanup.

Step 2

In a small bowl, combine the breadcrumbs and milk. Let this mixture sit for 5 minutes to allow the breadcrumbs to absorb the liquid fully.

Step 3

In a large mixing bowl, combine the ground beef, ground pork, chopped onion, minced garlic, soaked breadcrumbs, eggs, Worcestershire sauce, ketchup, parsley, salt, black pepper, paprika, and mustard powder. Use clean hands or a spatula to mix until the ingredients are evenly incorporated, but do not over-mix.

Step 4

Transfer the meat mixture into the prepared loaf pan, pressing it down gently to shape it evenly.

Step 5

In a small bowl, mix together the brown sugar, ketchup, and apple cider vinegar for the glaze. Spread this glaze evenly over the top of the meatloaf.

Step 6

Place the loaf pan in the preheated oven and bake for 60-70 minutes, or until the internal temperature reaches 160°F (71°C).

Step 7

Remove the meatloaf from the oven and let it rest for 10 minutes before slicing. This helps the juices redistribute and makes slicing easier.

Step 8

Serve warm with your favorite side dishes, such as mashed potatoes or roasted vegetables. Enjoy!
