Ingredients

  • 200 grams vermicelli rice noodles
  • 250 grams beef sirloin, thinly sliced
  • 3 tablespoons fish sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon sugar
  • 2 cloves garlic, minced
  • 1 stalk lemongrass, finely chopped
  • 1 large carrot, julienned
  • 1 large cucumber, julienned
  • 1 cup fresh mint leaves
  • 1 cup fresh cilantro leaves
  • 2 cups lettuce, chopped
  • 1 cup roasted peanuts, chopped
  • 2 tablespoons lime juice
  • 2 tablespoons vegetable oil
  • 1 small red chili, finely sliced
  • 1 liter water

Directions

Step 1

Begin by preparing the beef marinade. In a bowl, combine 2 tablespoons of fish sauce, soy sauce, sugar, minced garlic, and chopped lemongrass. Add the sliced beef to the bowl, ensuring the meat is well coated. Cover and let it marinate in the refrigerator for at least 20 minutes or up to 1 hour for better flavor.

Step 2

While the beef is marinating, bring 1 liter of water to boil in a large pot. Cook the vermicelli rice noodles according to the package instructions, typically about 4-5 minutes. Once cooked, rinse the noodles under cold water, drain, and set aside.

Step 3

Prepare the fresh vegetables and herbs. Julienne the carrot and cucumber, and roughly chop the lettuce. Set aside along with the fresh mint and cilantro leaves.

Step 4

Heat 2 tablespoons of vegetable oil in a non-stick pan over medium-high heat. Add the marinated beef slices and stir-fry for about 3-5 minutes until cooked through and slightly caramelized. Remove from heat and set aside.

Step 5

Prepare the dressing by combining the remaining 1 tablespoon of fish sauce with lime juice and sliced red chili in a small bowl. Stir well and adjust seasoning if necessary.

Step 6

Assemble the Bo Bun by dividing the cooked noodles among four bowls. Top each bowl with the cooked beef, carrots, cucumber, and lettuce.

Step 7

Garnish with fresh mint, cilantro, and a generous sprinkle of roasted peanuts.

Step 8

Drizzle the lime and chili dressing over the top and serve immediately.
