Ingredients

  • 1 pound breakfast sausage
  • 8 large eggs
  • 1 cup milk
  • 3 cups frozen hash browns
  • 2 cups shredded cheddar cheese
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 medium onion, diced
  • 1 medium bell pepper, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil

Directions

Step 1

Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish with nonstick spray or butter.

Step 2

Heat a large skillet over medium heat and add the olive oil. Once hot, add the diced onion, bell pepper, and garlic. Sauté for 3-4 minutes until softened.

Step 3

Add the breakfast sausage to the skillet and cook, breaking it up with a spoon, until browned and fully cooked. Drain any excess grease and set the mixture aside.

Step 4

In a large mixing bowl, whisk together the eggs, milk, salt, and black pepper until well combined.

Step 5

Layer the frozen hash browns evenly in the bottom of the prepared baking dish.

Step 6

Spread the cooked sausage and vegetable mixture evenly over the top of the hash browns.

Step 7

Sprinkle the shredded cheddar cheese evenly over the sausage mixture.

Step 8

Pour the egg mixture evenly over the top, making sure it fully covers the other ingredients.

Step 9

Place the casserole in the preheated oven and bake for 35-40 minutes, or until the eggs are set and the top is golden brown.

Step 10

Remove the casserole from the oven and let it cool for 5 minutes before slicing and serving.
