  • 500 grams Fresh strawberries
  • 100 grams Granulated sugar
  • 250 ml Heavy whipping cream
  • 50 grams Powdered sugar
  • 1 teaspoon Vanilla extract
  • 150 grams Digestive biscuits or graham crackers
  • 50 grams Unsalted butter

Directions

Step 1

Rinse and hull the fresh strawberries. Set aside 100 grams of the prettiest ones for garnish, and chop the remaining strawberries into small pieces.

Step 2

In a medium bowl, mix the chopped strawberries with granulated sugar. Let it sit for 10 minutes to macerate, releasing the natural juices.

Step 3

In a separate bowl, use a hand mixer or stand mixer to whip the heavy cream until soft peaks form. Add the powdered sugar and vanilla extract, then continue whipping until stiff peaks form. Refrigerate until needed.

Step 4

Crush the digestive biscuits or graham crackers into fine crumbs using a food processor or by placing them in a sealed plastic bag and rolling with a rolling pin.
