Preheat the oven to 350°F (175°C).
In a medium bowl, mix the graham cracker crumbs, melted butter, and sugar until well combined.
Press the mixture evenly into the bottom and up the sides of a 9-inch pie dish to form the crust.
Bake the crust in the preheated oven for 8–10 minutes, or until golden brown. Remove and let it cool completely.
In a saucepan over medium heat, combine the milk, 1.5 cups of heavy cream, and instant coffee granules. Heat the mixture until it is steaming but not boiling, stirring occasionally.
In a separate bowl, whisk together the egg yolks, 0.75 cups granulated sugar, and cornstarch until smooth and pale in color.
Slowly pour about 1 cup of the hot milk mixture into the egg yolk mixture, whisking constantly to temper the eggs.
Pour the tempered egg mixture back into the saucepan with the remaining milk mixture.

Spread the coffee custard evenly over the crust and refrigerate the pie for at least 2 hours, or until fully set.
Once the custard has set, whip 1 cup of whipping cream with the powdered sugar until stiff peaks form. Spread the whipped cream over the top of the pie in an even layer.
