Ingredients

  • 2.5 cups All-purpose flour
  • 1 tablespoon Granulated sugar
  • 1 teaspoon Salt
  • 1 cup Unsalted butter (cold, diced into cubes)
  • 6 tablespoons Ice water
  • 4 cups Fresh blueberries
  • 0.25 cup Granulated sugar (for berries)
  • 1 teaspoon Lemon zest
  • 1 large Egg (beaten, for egg wash)
  • 2 teaspoons Coarse sugar (for topping, optional)

Directions

Step 1

In a large bowl, combine all-purpose flour, 1 tablespoon of granulated sugar, and salt.

Step 2

Cut in the cold, diced butter using a pastry cutter or your fingertips until the mixture resembles coarse crumbs.

Step 3

Gradually add the ice water, 1 tablespoon at a time, mixing until the dough just comes together. Do not overmix.

Step 4

Divide the dough into two equal portions, flatten them into discs, wrap tightly in plastic wrap, and chill in the refrigerator for at least 30 minutes.

Step 5

Preheat your oven to 375°F (190°C).

Step 6

On a lightly floured surface, roll out one chilled dough disc to fit a 9-inch pie plate. Transfer it to the plate and trim excess dough, leaving about a 1/2-inch overhang.

Step 7

In a medium bowl, mix the blueberries with 1/4 cup of granulated sugar and the lemon zest. Spread the blueberries evenly over the pie crust in the plate.

Step 8

Roll out the second dough disc and place it over the blueberries. Trim any excess dough and crimp the edges to seal.

Step 9

Cut a few slits in the top crust to allow steam to escape. Brush the crust lightly with the beaten egg and sprinkle with coarse sugar, if desired.

Step 10

Bake the pie in the preheated oven for 45–50 minutes, or until the crust is golden brown and the blueberries are warm and bubbling.

Step 11

Allow the pie to cool for at least 2 hours at room temperature to set before slicing and serving.
