Ingredients

  • 200 grams rolled oats
  • 130 grams all-purpose flour
  • 100 grams brown sugar
  • 1 teaspoon baking powder
  • 0.5 teaspoon ground cinnamon
  • 115 grams unsalted butter
  • 1 teaspoon vanilla extract
  • 250 grams fresh blueberries
  • 50 grams granulated sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease a 9x9 inch (23x23 cm) baking pan and line it with parchment paper, ensuring some overhang on the sides for easy removal later.

Step 2

In a large bowl, combine the rolled oats, all-purpose flour, brown sugar, baking powder, and ground cinnamon. Mix until well combined.

Step 3

Melt the unsalted butter in a small saucepan over low heat or in the microwave until fully melted. Add the melted butter and vanilla extract to the dry ingredients and stir until the mixture resembles coarse crumbs.

Step 4

Reserve about 3/4 cup of the oat mixture for the topping. Press the remaining mixture firmly and evenly into the bottom of the prepared baking pan to form a solid crust.

Step 5

In a medium bowl, toss the fresh blueberries with the granulated sugar, cornstarch, and lemon juice until the blueberries are evenly coated.

Step 6

Spread the blueberry mixture evenly over the oat crust in the baking pan.

Step 7

Sprinkle the reserved oat mixture evenly over the top of the blueberries, letting some blueberries peek through.

Step 8

Bake in the preheated oven for 35-40 minutes, or until the top is golden brown and the blueberries are bubbly.

Step 9

Remove the pan from the oven and allow the bars to cool completely in the pan set on a wire rack.

Step 10

Once cooled, use the parchment paper to lift the bars out of the pan. Cut into 12 squares and serve. Store leftover bars in an airtight container at room temperature for up to 3 days.
