Ingredients

  • 1 cup Blueberries
  • 0.5 cup Granulated sugar
  • 1 tablespoon Fresh ginger
  • 4 cups Water
  • 6 large Lemon verbena leaves
  • 4 large Lemons
  • 2 cups Ice cubes
  • 0.25 cup Blueberries (for garnish)
  • 4 slices Lemon slices

Directions

Step 1

In a small saucepan, combine 1 cup of blueberries, 1/2 cup of granulated sugar, and 1 tablespoon of freshly grated ginger. Add 1/2 cup of water and heat over medium-high heat.

Step 2

Bring the mixture to a boil, stirring occasionally to dissolve the sugar, and then reduce the heat to simmer for 5 to 7 minutes. The blueberries should burst and create a syrup.

Step 3

Remove the saucepan from the heat and add 6 large lemon verbena leaves to the hot syrup. Let the mixture steep for 10 minutes to infuse the flavors.

Step 4

While the syrup steeps, juice 4 large lemons and strain the juice to remove any seeds. Set aside.

Once the syrup has steeped, strain it through a fine mesh sieve into a bowl to remove the solids. Let it cool to room temperature.
