Ingredients

  • 200 grams Graham cracker crumbs
  • 120 grams Unsalted butter, melted
  • 50 grams Granulated sugar
  • 230 grams Cream cheese, softened
  • 80 grams Powdered sugar
  • 1 teaspoon Vanilla extract
  • 120 milliliters Heavy whipping cream
  • 250 grams Fresh blueberries
  • 2 tablespoons Apricot jam
  • 1 teaspoon Water

Directions

Step 1

Preheat your oven to 175°C (350°F).

Step 2

In a medium mixing bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Mix thoroughly until the texture resembles wet sand.

Step 3

Press the mixture firmly into a 9-inch tart pan with a removable bottom, evenly spreading it across the bottom and up the sides.

Step 4

Bake the crust in the preheated oven for 10 minutes. Remove and let it cool completely to room temperature.

Step 5

In a large mixing bowl, beat the softened cream cheese and powdered sugar using a hand or stand mixer until smooth and creamy.

Step 6

Add the vanilla extract to the cream cheese mixture and mix until combined.

Step 7

In a separate bowl, whip the heavy whipping cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully incorporated and smooth.

Step 8

Spread the cream cheese filling evenly over the cooled crust, ensuring a smooth and level surface. Refrigerate for at least 2 hours to set.

Step 9

Once the filling is set, arrange the fresh blueberries on top of the tart, covering the surface completely.

Step 10

In a small saucepan over low heat, combine the apricot jam and water, stirring until melted and smooth. Let it cool slightly.

Step 11

Using a pastry brush, gently glaze the blueberries with the apricot jam mixture to give them a glossy finish.

Step 12

Refrigerate the tart until ready to serve. Carefully remove it from the tart pan before slicing and enjoy!
