Ingredients

  • 1 cup fresh or frozen blueberries
  • 1 tablespoon granulated sugar
  • 1 teaspoon cornstarch
  • 1 teaspoon lemon juice
  • 3 tablespoons all-purpose flour
  • 1 teaspoon baking powder
  • 1 pinch salt
  • 1 tablespoon unsalted butter (cold, cubed)
  • 2 tablespoons unsweetened almond milk (or skim milk)
  • 0.25 teaspoon vanilla extract

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease two small ramekins (6-8 ounces each) with nonstick spray.

Step 2

In a small bowl, mix the blueberries, granulated sugar, cornstarch, and lemon juice until the berries are evenly coated. Divide the berry mixture evenly between the two ramekins.

Step 3

In another bowl, whisk together the flour, baking powder, and a pinch of salt. Add the cold, cubed butter to the bowl and use a fork or your fingertips to cut the butter into the flour mixture until it forms pea-sized crumbs.

Step 4

Stir in the almond milk and vanilla extract until the mixture just comes together into a dough. Do not overmix.

Step 5

Divide the dough in half and drop each portion on top of the blueberry mixture in the ramekins. Spread it out slightly, but leave some gaps for the blueberries to bubble through.

Step 6

Place the ramekins on a baking sheet to catch any drips and bake in the preheated oven for 22-25 minutes, or until the topping is golden brown and the blueberries are bubbly.

Step 7

Let the cobblers cool for a few minutes before serving. Enjoy warm, optionally with a dollop of low-fat whipped cream or a small scoop of low-point ice cream.
