Ingredients

  • 2 cups all-purpose flour
  • 3 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • 0.5 teaspoons salt
  • 0.5 cups unsalted butter (cold)
  • 0.75 cups buttermilk
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries
  • 2 tablespoons melted butter (for brushing)
  • 1 tablespoons coarse sugar (for topping, optional)

Directions

Step 1

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper or a silicone baking mat.

Step 2

In a large mixing bowl, combine the all-purpose flour, granulated sugar, baking powder, and salt. Whisk together to evenly distribute the ingredients.

Step 3

Cut the cold unsalted butter into small cubes and add it to the dry mixture. Use a pastry cutter or your fingers to work the butter into the flour until the mixture resembles coarse crumbs.

Step 4

In a small bowl, mix together the buttermilk and vanilla extract. Gradually pour the wet ingredients into the dry ingredients, stirring gently until just combined. Avoid overmixing to ensure the biscuits remain tender.

Step 5

Gently fold the fresh blueberries into the dough, being careful not to crush them.

Step 6

Turn the dough out onto a lightly floured surface. Knead it gently a few times to bring it together, then pat it into a rectangle about 1 inch thick.

Step 7

Using a round biscuit cutter or the rim of a glass, cut out biscuits and place them on the prepared baking sheet, leaving about an inch of space between each.

Step 8

Brush the tops of the biscuits with melted butter and sprinkle with coarse sugar if desired.

Step 9

Bake in the preheated oven for 16-18 minutes, or until the tops are golden brown and the biscuits are cooked through.

Step 10

Remove from the oven and allow the biscuits to cool slightly before serving. These are best enjoyed warm, either plain or with a drizzle of honey or a dollop of butter.
