  • 0.25 teaspoons Salt
  • 1 teaspoons Cinnamon
  • 2 medium Ripe bananas (mashed)
  • 0.5 cups Unsweetened applesauce
  • 0.25 cups Honey
  • 1 large Egg
  • 1 teaspoons Vanilla extract
  • 1 cup Fresh blueberries
  • 1 for the tray Non-stick spray or paper muffin liners

Directions

Step 1

Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or lightly spray with non-stick spray.

Step 2

In a medium-sized bowl, combine the whole wheat flour, baking powder, baking soda, salt, and cinnamon. Mix well and set aside.

Step 3

In a large mixing bowl, mash the bananas until smooth. Add the applesauce, honey, egg, and vanilla extract. Whisk until thoroughly combined.

Step 4

Gradually fold the dry ingredients into the wet mixture. Stir gently until just combined; do not over-mix.

Step 5

Carefully fold in the fresh blueberries, being cautious not to crush them.

Bake in the preheated oven for 18 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Step 8

Remove the muffins from the oven and allow them to cool in the pan for 5 minutes. Then transfer them to a wire rack to cool completely.

Step 9

Serve warm or store in an airtight container at room temperature for up to 3 days.
