Preheat oven to 350°F (175°C) and prepare a large baking sheet by lining it with parchment paper.
In a medium bowl, mix chopped walnuts, chopped pistachios, granulated sugar, ground cinnamon, and kosher salt. Set aside.
Melt unsalted butter in a small saucepan or microwave and keep warm.
Lay a sheet of phyllo dough on a clean workspace and brush it lightly with melted butter. Layer a second sheet of phyllo dough directly on top, brushing it lightly with butter as well.
Sprinkle a thin, even layer of the nut mixture over the phyllo stack, leaving a 1-inch border on all sides.
Scatter a small handful of blueberries over the nut mixture, ensuring they are evenly distributed.
Carefully roll the phyllo stack into a tight log starting from one long side. Gently coil the log into a spiral shape and place it on the prepared baking sheet.
Repeat steps 4–7 with the remaining phyllo sheets, nut mixture, and blueberries until all ingredients are used.
Brush the tops and sides of the spirals generously with melted butter.
Bake for 35–40 minutes, or until the spirals are golden and crisp.
While the baklava spirals are baking, prepare the syrup. In a small saucepan, combine honey, water, lemon juice, and vanilla extract. Bring to a simmer over medium heat, stirring occasionally, and cook for 5–7 minutes until slightly thickened. Remove from heat and let cool slightly.
Once the spirals are out of the oven, immediately spoon the warm syrup over each one, ensuring they are evenly coated. Allow the syrup to soak into the spirals for at least 15 minutes.
