Ingredients

  • 200 grams All-purpose flour
  • 2 teaspoons Baking powder
  • 0.5 teaspoon Baking soda
  • 0.25 teaspoon Salt
  • 2 medium Ripe bananas
  • 1 large Egg
  • 120 grams Plain Greek yogurt
  • 60 milliliters Honey
  • 1 teaspoon Vanilla extract
  • 150 grams Fresh blueberries
  • 45 milliliters Vegetable oil (or melted coconut oil)

Directions

Step 1

Preheat your oven to 180°C (350°F). Line a 12-cup muffin tin with paper liners or lightly grease with cooking spray.

Step 2

In a large mixing bowl, sift together the all-purpose flour, baking powder, baking soda, and salt. Set aside.

Step 3

In a medium bowl, mash the ripe bananas until smooth. Add the egg, Greek yogurt, honey, vegetable oil, and vanilla extract, and whisk until well combined.

Gradually fold the wet ingredients into the dry ingredients. Avoid overmixing; stir until just combined.
