Ingredients

  • 16 pieces large white button mushrooms
  • 100 grams blue cheese
  • 75 grams cream cheese
  • 50 grams breadcrumbs
  • 2 cloves garlic
  • 2 tablespoons fresh parsley
  • 1 tablespoon olive oil
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it with olive oil.

Step 2

Clean the mushrooms gently with a damp paper towel to remove any dirt. Carefully remove the stems and set the mushroom caps aside. Finely chop the stems and set them aside for the filling.

Step 3

In a small skillet, heat the olive oil over medium heat. Add the chopped mushroom stems and minced garlic. Sauté for 3-4 minutes, stirring frequently, until softened and fragrant. Remove from heat and let cool slightly.

Step 4

In a mixing bowl, combine the blue cheese, cream cheese, breadcrumbs, sautéed mushroom stems and garlic, finely chopped parsley, salt, and black pepper. Mix until the filling is smooth and well combined.

Using a small spoon, carefully stuff each mushroom cap with the filling, pressing gently to pack it tightly. Arrange the stuffed mushrooms on the prepared baking sheet, filling-side up.
