Ingredients

  • 4 large Russet potatoes
  • 4 tablespoons Unsalted butter
  • 0.5 cup Whole milk
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 1 pound Ground beef (or lamb)
  • 2 tablespoons Olive oil
  • 1 medium, diced Yellow onion
  • 2 medium, diced Carrots
  • 1 cup Frozen peas
  • 2 minced Garlic cloves
  • 1 tablespoon Tomato paste
  • 0.5 cup Beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Fresh thyme leaves
  • 1 tablespoon, chopped, optional Fresh parsley

Directions

Step 1

Peel and dice the potatoes into even-sized chunks. Place them in a large pot, cover with water, and bring to a boil over medium heat. Cook for 15-20 minutes until fork-tender.

Step 2

Drain the potatoes and return them to the pot. Add butter, milk, salt, and ground black pepper. Mash until smooth and creamy. Set them aside.

Step 3

Preheat your oven to 400°F (200°C).

Step 4

In a large skillet, heat olive oil over medium heat. Add the diced onion and carrots, and cook for 5-7 minutes until softened.

Step 5

Add the minced garlic and cook for an additional minute, until fragrant.

Step 6

Push the vegetables to one side of the skillet and add the ground beef (or lamb). Cook until browned, breaking it up with a spoon as it cooks. Drain off any excess fat.

Step 7

Stir in the tomato paste, beef broth, Worcestershire sauce, fresh thyme, and frozen peas. Allow this mixture to simmer for 5 minutes, until slightly thickened.

Step 8

Transfer the meat and vegetable mixture to the bottom of a 9x13-inch baking dish, spreading it out evenly.

Step 9

Spoon the mashed potatoes over the meat mixture, spreading them out evenly to cover. Use a fork to create decorative ridges on the surface.

Step 10

Place the dish in the preheated oven, and bake for 20 minutes, or until the top is lightly golden and the filling is bubbling.

Step 11

Optional: Sprinkle freshly chopped parsley over the top before serving for a final touch of color and flavor.

Step 12

Allow the Shepherd's Pie to cool for 5 minutes before serving. Enjoy!
